Banana Coconut Ice Cream - Vegan Recipe
Bobby : Sophie and I are going to rock yourculinary world today with an ice cream that
is homemade, dairy-free, only has two ingredients,and can be made in the food processor in a
mere matter of minutes. How awesome does thatsound?
Sophie: Pretty awesome.Bobby : First up, I just pulled some coconut
cream out of the fridge. This is going tobe one of our only two ingredients. Why don't
you grab that hand beater. I'll start it off.Now your turn. Just keep it so it's touching
the bottom. Otherwise we'll be wearing itall over our clothes and that's not going
to be good for anyone. That's good. It's beenabout three minutes and you can see by the
looks of the cream, it's nice and thick, itwent up in volume. If you stick your finger
in it which I saw you already did, you'llsee that it really has that nice fluffy ... Whoa!
That's where it get edited out. No one isgoing to see that, Sophie. Sophie is my nine-year-old,
adorable niece and she is a child foodie.The other week we were driving. Anna asked
her, "Sophie, what's your favorite snack?"Sophie: Sushi.
Bobby : She said it just like that. I wastaken aback because at her age chili cheese
dogs did it for me. We're looking at a futureculinary rock star in the making here. Next
up, I have two bananas that last night I cutinto half-inch thick rounds and I put them
into the freezer. You have to have cold bananashere. The way it will help with the consistency
of the ice cream. Why don't we pour thesein the food processor. Perfect. I would probably
scrape down the sides a little bit, but it'snice and firm. Blend away, my girl. As you
scrape down the sides and as you break upthat banana, you'll see it starts to cream
out. It actually looks like a big scope ofice cream right now.
Sophie: Yeah.Bobby : There you go. See. See little bits
of the banana in there. It's creamy as canbe. This literally is ice cream with one ingredient.
Sophie: It looks exactly like ice cream.Bobby : Next up, let's grab this coconut cream
that you beat here. As this step you don'twant to process it too long because the heat
from the motor can actually start to meltyour ice cream. Would that be a shame or what?
Sophie: Yeah, really. I do not want meltedice cream.
Bobby : Amen to that, sister. Sophie, youadd about a handful of unsweetened toasted
shredded coconut. Do you want to zest thelime?
Sophie: Sure. Let's do it.Bobby : Look at that. The kid's a natural
zester. Let's toss the lid back on and buzzaway for about fifteen or twenty more seconds.
Creamy, dreamy, loaded with delicious bits.Ready to do some scooping?
Sophie: Yeah.Bobby : Okay. We've got our parfait glasses
here and your choice of toppings. This isnice soft serve consistency. If you want to
stick this in the freezer, you can do that.The only thing is it's going to set up really
hard because there's no artificial stabilizersor emulsifies in there. If you're going to
keep it in the freezer, take it out aboutforty-five minutes before you're going to
use it because it's going to be really rockhard. Chocolate chips. She was nibbling on
those before we started, just so you know.Sophie: I was.
Bobby : At least you admit it. Then, sincewe're so fancy and we're foodies, I'm going
to go a little lime zest on top. Cheers. Lookat that.
Sophie: That is good.Bobby : Insane, right? The texture is so creamy.
Sophie: So creamy. Wow.Bobby : Coconut flavor just rings through.
You know what? You don't even need to sweetenthe coconut cream because the banana brings
all the sweetness to the party. Right?Sophie: Really good.
Bobby : Isn't this better than going out tothe ice cream store?
Sophie: Really better than any old ice creamthat you would get in a shop.
